Posted by: Random Dent Quantity: Ingredients: 3/4 cup uncooked black beans 3 cups water 1 tbs. vegetable oil 1/2 cup chopped onion 1/2 tsp. basil 1/2 tsp. oregano 1/2 tbs. minced garlic 1/3 cup finely chopped green (about 3 or 4 cloves) pepper 1/2 tsp. ground cumin dash ground coriander 1/2 crumbled dried chili 3/4 tsp. salt pepper or one minced Jalapeno pepper Instructions: Soak beans in water in a saucepan for 8 hours. ( Just put them in in the morning and forget about them until dinner). Bring to a boil and simmer, covered, for 1 1/4 hours. Meanwhile, heat oil in a frying pan and fry onions, basil, oregano, and garlic. After a few minutes, add peppers, spices, chili pepper and salt. Cook until tender and add to the beans. When beans are done, drain excess water and serve over rice. Comments: Metal Micky: I have the same problem you do. I don't like veggies, so I end up eating only bread and dairy. One good thing is pasta: most of the sauces you make for it have some sort of vegetable content, which you need, but don't taste like blah veggies. And I'm sure people in this room have hundreds of sauce recipes. :) Another good thing is beans/chili. Lots of recipes for those, too.
